Ingredients:
4 slices of bread
2 ripe avocados
4 slices of bacon
4 eggs
Fresh cilantro, chopped
Salt and pepper to taste
Olive oil for frying
Instructions:
Cook the Bacon:
In a pan over medium heat, cook the bacon until crispy. Once done, place it on a paper towel to drain the excess fat. Set aside.
Prepare the Toast:
Toast the bread slices in a toaster or on a skillet until golden brown.
Prepare the Avocado:
While the bread is toasting, cut the ripe avocados in half, remove the pit, and scoop out the flesh. Mash it lightly with a fork and season with salt and pepper.
Fry the Eggs:
In the same pan you used for the bacon, add a little bit of olive oil and heat over medium-high. Crack the eggs into the pan, cooking until the whites are set but the yolks are still runny (or longer if you prefer firmer yolks).
Assemble the Toast:
Spread the mashed avocado onto the toasted bread slices.
Place two slices of crispy bacon on each toast.
Top with a fried egg and sprinkle with chopped cilantro.
Season and Serve:
Sprinkle the egg with a little more salt and pepper and serve immediately.
