Baked Salmon in Foil with Asparagus & Lemon Garlic Butter

Ingredients
- 1 lb (450 g) salmon fillets, divided
- 1 lb (450 g) asparagus, woody ends trimmed
- 2 tbsp vegetable or chicken broth
- 1½ tbsp fresh lemon juice
- 1 tbsp hot sauce (such as Sriracha)
- 4 cloves garlic, minced
- 3–4 tbsp butter, cut into small cubes
- 2 tbsp fresh parsley or cilantro, chopped
- Salt and freshly ground black pepper, to taste
- Lemon slices, for serving
Instructions
- Preheat the oven to 425°F (220°C). Cut two large sheets of aluminum foil and place them on a work surface.
- Mix the broth, lemon juice, and hot sauce in a small bowl.
- Season the salmon with salt and pepper. Place each fillet in the center of a foil sheet and arrange the asparagus alongside it.
- Sprinkle the minced garlic over the salmon and asparagus. Drizzle generously with the lemon-broth mixture.
- Divide the butter pieces between the packets, placing them over the salmon and asparagus.
- Fold and tightly crimp the foil edges, leaving a little space inside for the heat to circulate.
- Place the packets on a baking sheet and bake for 9–12 minutes, until the salmon is cooked through.
- Carefully open the packets. Drizzle with additional lemon juice and garnish with fresh parsley or cilantro and lemon slices. Serve immediately.
Tip: For slightly crispier edges, open the foil packets and broil for about 2 minutes at the end.
