Balsamic Grilled Chicken Orzo with Roasted Veggies & Lemon Whipped Ricotta
🛒 Ingredients
For the chicken
- 2 large chicken breasts (or 3–4 thighs)
- 3 tbsp balsamic vinegar
- 2 tbsp olive oil
- 2 cloves garlic (minced)
- 1 tbsp honey (or brown sugar)
- 1 tsp dried oregano
- 1 tsp paprika
- ½ tsp black pepper
- 1 tsp salt
For the orzo base
Orzo
- 1 cup orzo pasta
- 2 tbsp olive oil or butter
- 2 cloves garlic (minced)
- 2 cups chicken broth (or water + stock cube)
- Salt to taste
For roasted vegetables
- 1 zucchini (cubed)
- 1 red bell pepper (cubed)
- 1 cup cherry tomatoes
- 1 small red onion (sliced)
- 2 tbsp olive oil
- 1 tsp dried Italian herbs (or oregano + thyme)
- Salt & pepper to taste
For lemon whipped ricotta
Ricotta
- 1 cup ricotta cheese
- 1 tbsp olive oil
- 1 tbsp lemon juice
- Zest of 1 lemon
- Salt to taste
- Optional: 1 tbsp milk or cream (for extra smooth texture)
🔥 Step 1: Marinate the chicken
- In a bowl, mix:
- balsamic vinegar
- olive oil
- garlic
- honey
- oregano, paprika, salt, pepper
- Coat chicken well.
- Cover and marinate for at least 30 minutes (up to overnight for best flavor).

- Preheat oven to 200°C (400°F).
- Toss all vegetables with olive oil, herbs, salt, and pepper.
- Spread on a baking tray in a single layer.
- Roast for 20–25 minutes, stirring halfway, until slightly charred and soft.

- Heat a grill pan or skillet on medium-high heat.
- Cook chicken for:
- 5–7 minutes per side (depending on thickness)

- Heat olive oil or butter in a pot.

- Season with salt.

- Add ricotta, olive oil, lemon juice, zest, and salt to a bowl.
- Whip using a fork, whisk, or hand blender.
- Add a splash of milk/cream if you want it extra fluffy.
- Taste and adjust lemon or salt.

- Spread warm orzo on a plate.
- Add roasted vegetables on top.
- Place sliced balsamic chicken over veggies.
