Balsamic Grilled Chicken Orzo with Roasted Veggies & Lemon Whipped Ricotta

🛒 Ingredients

For the chicken

  • 2 large chicken breasts (or 3–4 thighs)
  • 3 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • 2 cloves garlic (minced)
  • 1 tbsp honey (or brown sugar)
  • 1 tsp dried oregano
  • 1 tsp paprika
  • ½ tsp black pepper
  • 1 tsp salt

For the orzo base

Orzo

  • 1 cup orzo pasta
  • 2 tbsp olive oil or butter
  • 2 cloves garlic (minced)
  • 2 cups chicken broth (or water + stock cube)
  • Salt to taste

For roasted vegetables

  • 1 zucchini (cubed)
  • 1 red bell pepper (cubed)
  • 1 cup cherry tomatoes
  • 1 small red onion (sliced)
  • 2 tbsp olive oil
  • 1 tsp dried Italian herbs (or oregano + thyme)
  • Salt & pepper to taste

For lemon whipped ricotta

Ricotta

  • 1 cup ricotta cheese
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • Zest of 1 lemon
  • Salt to taste
  • Optional: 1 tbsp milk or cream (for extra smooth texture)

🔥 Step 1: Marinate the chicken

  1. In a bowl, mix:
    • balsamic vinegar
    • olive oil
    • garlic
    • honey
    • oregano, paprika, salt, pepper
  2. Coat chicken well.
  3. Cover and marinate for at least 30 minutes (up to overnight for best flavor).

🍅 Step 2: Roast the vegetables

  1. Preheat oven to 200°C (400°F).
  2. Toss all vegetables with olive oil, herbs, salt, and pepper.
  3. Spread on a baking tray in a single layer.
  4. Roast for 20–25 minutes, stirring halfway, until slightly charred and soft.

  1. Heat a grill pan or skillet on medium-high heat.
  2. Cook chicken for:

  1. Heat olive oil or butter in a pot.
  2. Add garlic and sauté for 30 seconds.

  4. Pour in broth.

  6. Cook until tender and creamy (not dry).
  7. Season with salt.

🍋 Step 5: Make lemon whipped ricotta

  1. Add ricotta, olive oil, lemon juice, zest, and salt to a bowl.
  2. Whip using a fork, whisk, or hand blender.
  3. Add a splash of milk/cream if you want it extra fluffy.
  4. Taste and adjust lemon or salt.

🍽️ Step 6: Assemble the dish

  1. Spread warm orzo on a plate.
  2. Add roasted vegetables on top.
  3. Place sliced balsamic chicken over veggies.
  4. Add dollops or a swipe of whipped ricotta.
  5. Drizzle:
    • olive oil or leftover balsamic glaze (optional)
  6. Finish with fresh herbs (parsley or basil).
