Ingredients:

For the Beef and Gravy:

1 1/2 lbs beef tips or stew meat
2 tbsp olive oil
1 small onion, finely chopped
3 cloves garlic, minced
2 cups sliced mushrooms (cremini or button)
2 cups beef broth
1/2 cup heavy cream
2 tbsp all-purpose flour
2 tbsp Worcestershire sauce
1 tsp dried thyme
Salt and black pepper to taste
For the Pasta Bake:

12 oz pasta (penne or rigatoni)
1 1/2 cups shredded mozzarella cheese
1/2 cup grated Parmesan cheese
2 tbsp fresh parsley, chopped (for garnish)

Cook the beef tips: Heat olive oil in a large skillet over medium-high heat. Season beef tips with salt and pepper, then sear until browned on all sides. Remove and set aside.

Sauté the mushrooms and onions: In the same skillet, add the onions and cook until softened, about 3 minutes. Stir in garlic and mushrooms, cooking until browned, about 5 minutes.

Make the gravy: Sprinkle flour over the mushrooms and stir to coat. Gradually add beef broth, stirring constantly to avoid lumps. Stir in Worcestershire sauce, dried thyme, and heavy cream. Simmer for 3–5 minutes until thickened. Return the beef tips to the skillet, cover, and cook on low heat for 20–25 minutes, or until tender.

Cook the pasta: While the beef simmers, cook pasta in salted boiling water until al dente. Drain and set aside.

Assemble the pasta bake: Preheat oven to 375°F (190°C). Combine the cooked pasta with the beef and mushroom gravy in a large mixing bowl. Transfer to a greased 9×13-inch baking dish. Top with mozzarella and Parmesan cheese.

Bake: Bake uncovered for 15–20 minutes, or until the cheese is melted and bubbly.

Serve: Garnish with fresh parsley and serve hot. Enjoy this rich, comforting dish with a crisp green salad or garlic bread!
