Carnivore Crème Brûlée Cheesecake

Ingredients
Cheesecake Base
12 oz (340 g) full-fat cream cheese, room temperature
1 cup heavy cream
4 large egg yolks
1 whole egg
¼ tsp sea salt
1 tsp vanilla extract (optional)
Optional Sweet (Carnivore-Friendly)
2–3 tbsp powdered allulose (best for brûlée)
Brûlée Topping (choose one)
2 tbsp allulose (classic sweet crack)
OR1–2 tbsp finely grated Parmesan or Pecorino (strict carnivore)
Instructions
Prepare
Preheat oven to 325°F / 165°C
Line bottom of an 8-inch springform pan
Wrap outside with foil (for water bath)
Make Batter
Beat cream cheese until completely smooth
Slowly mix in heavy cream
Add egg yolks, then whole egg (one at a time)
Add salt, vanilla, and optional allulose
Mix gently — do not whip air
Bake (Custard Style)
Pour batter into pan
Place pan in a hot water bath
Bake 45–55 minutes
Center should jiggle slightly
Turn oven off, crack door, rest 30 minutes
Chill at least 4 hours (overnight best)
Brûlée Finish (Just Before Serving)
Sweet Version
Sprinkle thin layer of allulose
Torch until caramelized and glassy
Let harden 2 minutes
Savory Version
Sprinkle grated aged cheese
Torch until melted and crisp
