Broccoli Cheese Patties
Ingredients:
1 large head of broccoli, chopped into florets
1 cup shredded cheddar cheese
2 large eggs
1/2 cup all-purpose flour
1/4 cup breadcrumbs
2 cloves garlic, minced
1/4 cup finely chopped green onions
Salt and pepper to taste
Olive oil for frying
Directions:
Steam the broccoli florets until tender, about 5-7 minutes. Drain and let cool slightly, then chop finely.
In a large bowl, combine the chopped broccoli, shredded cheddar cheese, eggs, flour, breadcrumbs, garlic, green onions, salt, and pepper. Mix until well combined.
Heat a few tablespoons of olive oil in a large skillet over medium heat.
Scoop about 2 tablespoons of the broccoli mixture and form into a patty. Repeat with the remaining mixture.
Fry the patties in the hot oil until golden brown and crispy, about 3-4 minutes per side. Drain on paper towels.
Serve warm with your favorite dipping sauce!
