1. Preheat
Preheat oven to 325°F (163°C).
Grease a 7ā8 inch round pan or springform pan with butter.
2. Prepare the batter
In a mixing bowl:
Beat the cream cheese until smooth.
Add the eggs, one at a time.
Mix in the sour cream or heavy cream.
Add sweetener (if using), vanilla (optional), and salt.
Blend until silky smooth, but do not overmix (prevents cracking).
3. Bake
Pour batter into your greased pan.
Bake 45ā55 minutes, or until:
The edges are set
The center jiggles slightly when nudged
4. Cool
Turn the oven off, crack the door, and let cheesecake rest 1 hour.
Move to the fridge for at least 4 hours, ideally overnight.
