  • 16 oz (450 g) cream cheese, softened

  • 2 large eggs

  • ½ cup sour cream or ½ cup heavy cream

    • Options: allulose (best texture), erythritol, or no sweetener at all for strict carnivore

  • 1 tsp vanilla extract (optional—omit for strict carnivore)

  • Pinch of salt

Strict Carnivore version: cream cheese, eggs, sour cream/heavy cream, salt.
It will taste like a lightly sweet, rich cheesecake even without sweetener.

1. Preheat

  • Preheat oven to 325°F (163°C).

  • Grease a 7–8 inch round pan or springform pan with butter.

2. Prepare the batter

In a mixing bowl:

  1. Beat the cream cheese until smooth.

  2. Add the eggs, one at a time.

  3. Mix in the sour cream or heavy cream.

  4. Add sweetener (if using), vanilla (optional), and salt.

  5. Blend until silky smooth, but do not overmix (prevents cracking).

3. Bake

  • Pour batter into your greased pan.

  • Bake 45–55 minutes, or until:

    • The edges are set

    • The center jiggles slightly when nudged

4. Cool

  • Turn the oven off, crack the door, and let cheesecake rest 1 hour.
