Ingredients

  • 8 large eggs (room temperature)

  • 4 oz cream  cheese or 4 oz softened  butter (for richer flavor)

  • ½ cup powdered egg white OR ¾ cup liquid  egg whites

  • 1 tsp baking powder (optional, improves lift)

  • ½ tsp salt

  • 2 tbsp melted beef tallow or butter (for moisture)


Instructions

1. Prep

  • Preheat oven to 325°F (165°C).

  • Line a loaf pan with parchment paper.

2. Whip the Egg Whites

  • Separate 6 egg whites (save the yolks).

  • In a large bowl, whip egg whites (plus powdered egg whites if using) until stiff peaks form — this gives the bread its structure.

3. Blend Yolks & Creamy Ingredients

In a blender or bowl, mix:

  • 2 whole eggs + the 6 leftover yolks

  • Cream cheese or butter

  • Salt

  • Baking powder
    Blend until totally smooth.

4. Fold Together

  • Gently fold the yolk mixture into the whipped egg whites.

  • Add melted tallow/butter at the end and fold lightly.
