Cheesy Herb & Corn Pull-Apart Bread

🛒 Ingredients

🔹 Dough

  • 3 cups all-purpose flour

  • 2¼ tsp (1 packet) active dry yeast

  • 1 tbsp sugar

  • 1 tsp salt

  • ¾ cup warm milk (about 110°F / 43°C)

  • ¼ cup warm water

  • 2 tbsp olive oil or melted butter

  • 1 large egg


🔹 Filling

  • 1 cup sweet corn kernels (fresh, canned drained, or frozen thawed)

  • 1½ cups shredded mozzarella cheese

  • ½ cup shredded cheddar cheese

  • 2 tbsp softened butter

  • 2 cloves garlic, minced

  • 2 tbsp fresh parsley, finely chopped

  • 1 tsp dried oregano or Italian seasoning

  • ¼ tsp black pepper

  • Optional: pinch chili flakes


🔹 Topping

  • 1 tbsp melted butter

  • 1 tbsp chopped parsley

  • Extra cheese for sprinkling (optional)


👩‍🍳 Instructions

1️⃣ Activate the Yeast

  1. In a small bowl, combine warm milk, warm water, sugar, and yeast.

  2. Let sit 5–10 minutes until foamy.
    (If it doesn’t foam, your yeast may be inactive.)


2️⃣ Make the Dough

  1. In a large bowl, combine flour and salt.

  2. Add yeast mixture, egg, and oil/butter.

  3. Mix until dough forms.

  4. Knead 8–10 minutes until smooth and elastic.
    (Stand mixer: 5–6 minutes on medium.)

The dough should be soft but not sticky. Add 1 tbsp flour at a time if needed.


3️⃣ First Rise

  1. Place dough in a lightly greased bowl.

  2. Cover and let rise in a warm place 1–1½ hours until doubled in size.


4️⃣ Prepare the Filling

In a bowl, mix:

  • Corn

  • Mozzarella

  • Cheddar

  • Garlic

  • Parsley

  • Oregano

  • Pepper

Set aside.


5️⃣ Shape the Pull-Apart Bread

  1. Grease a 9×5-inch loaf pan.

  2. Punch down dough and roll into a rectangle (about 12×16 inches).

  3. Spread softened butter over dough.

  4. Evenly spread the cheese-corn mixture on top.

Now you have two options:

✔ Classic Layered Pull-Apart

  • Cut dough into 3–4 long strips.

  • Stack strips on top of each other.

  • Cut stack into squares.

  • Arrange squares upright in loaf pan.

✔ Swirl Style (like in the image)

  • Roll dough tightly like a cinnamon roll.

  • Slice partially across the top (not all the way through).

  • Place in loaf pan.


6️⃣ Second Rise

Cover loosely and let rise 30–40 minutes until puffy.


7️⃣ Bake

  • Preheat oven to 350°F (175°C).

  • Bake 30–40 minutes until golden brown on top.

  • If browning too fast, loosely cover with foil after 20–25 minutes.

Internal temp should reach about 190°F.


8️⃣ Finish

  • Brush top with melted butter.

  • Sprinkle fresh parsley and extra cheese if desired.

  • Let cool 10–15 minutes before removing from pan.
