1 lb ground beef
1/2 lb ground pork (optional for added flavor)
1/2 cup breadcrumbs
1 large egg
2 cloves garlic, minced
1 tsp onion powder
1/2 tsp smoked paprika
1/2 tsp salt
1/4 tsp black pepper
For the Filling:
4 oz cream cheese, softened
1/2 cup shredded cheddar cheese
1 jalapeño, finely chopped (seeds removed for less heat)
For Topping (Optional):
2 tbsp fresh parsley, chopped

Prepare the filling: In a small bowl, mix cream cheese, cheddar cheese, and chopped jalapeño until combined. Roll into small balls (about 1 tsp each) and set aside in the fridge.
Make the meatball mixture: In a large bowl, combine ground beef, ground pork (if using), breadcrumbs, egg, garlic, onion powder, paprika, salt, and pepper. Mix until just combined.
Stuff the meatballs: Take a small scoop of meat mixture (about 1.5 tbsp), flatten it in your palm, and wrap it around a cheese filling ball. Ensure the filling is fully enclosed. Repeat with remaining mixture and filling.
Cook the meatballs: Heat a large skillet over medium heat with a drizzle of oil. Add meatballs and cook until browned on all sides, about 8–10 minutes, turning occasionally. Alternatively, bake at 400°F (200°C) for 18–20 minutes on a lined baking sheet.
Serve: Garnish with fresh parsley and serve hot. Perfect with ranch, sour cream, or your favorite dipping sauce!
