 Chicken Bacon Ranch Potato Skillet, Dinner Recipe

Equipment

  • 1 Air Fryer
  • 1 Stove/Oven

Ingredients

  • 2 chicken breasts
  • 4 medium/large potatoes
  • olive oil + salt, pepper, garlic powder, paprika (for potatoes)
  • 1 tbsp dry ranch seasoning
  • 1/2 tsp each of salt and pepper
  • 1 tsp paprika
  • 6 strips of bacon
  • 1 cup of shredded mozzarella cheese
  • Ranch dressing

Instructions

  • Wash potatoes and cut up into cubes. Toss the potatoes in a bowl with olive oil, salt, pepper, garlic powder, and paprika (I don’t use exact measurements for this part).
  • Cook potatoes in the air fryer at 400 degrees for about 20-25 minutes shaking them around at least a couple times while they cook.
  • Once potatoes are cooking, chop strips of bacon and cook the bacon in a skillet over medium high heat. Remove bacon from the pan and leave only 2 tbsp of the bacon grease on the skillet.
  • Cut chicken into cubes. Add the chicken to the hot skillet. Season with salt, pepper, paprika, and ranch seasoning. Once chicken is cooked remove the pan from the heat.
  • Once the potatoes are finished cooking add potatoes to the skillet. Stir well and top with about a cup of shredded mozzarella cheese. Top with the cooked bacon.
  • Broil in the oven for just a couple minutes to melt the cheese (you could also cover with a lid and let this sit on the stove until cheese melts).
  • Top each plate with some ranch dressing. Enjoy!
