Chicken Salad


2 cups cooked chicken, shredded or chopped
1/2 cup mayonnaise
1/4 cup plain Greek yogurt
1 tablespoon Dijon mustard
1 tablespoon lemon juice
1/4 cup chopped celery
1/4 cup chopped red onion
1/4 cup chopped fresh parsley
Salt and pepper, to taste
Lettuce leaves, for serving
Bread or croissants, for serving


In a large bowl, combine the cooked chicken, mayonnaise, Greek yogurt, Dijon mustard, and lemon juice. Mix until well combined.
Add the celery, red onion, and parsley to the chicken mixture. Stir until everything is evenly coated.
Season the chicken salad with salt and pepper, to taste.
To serve, place a lettuce leaf on a plate and spoon the chicken salad on top. Alternatively, serve the chicken salad on bread or croissants to make sandwiches.
