  • 2 cups mushrooms, sliced (button or cremini)

  • 3 cups fresh spinach

  • 3 cloves garlic, minced

  • ½ cup heavy cream (or half-and-half for lighter option)

  • ¼ cup chicken broth

  • ½ cup shredded mozzarella or grated Parmesan

  • 1 tsp Italian seasoning

  • ½ tsp paprika

  • Salt & black pepper, to taste

  1. Preheat oven

    • Heat oven to 375°F (190°C).

    • Lightly grease a baking dish.

  2. Season the chicken

    • Pat chicken dry.

    • Season with salt, pepper, paprika, and Italian seasoning.

    • Place in baking dish.

  3. Add vegetables

    • Scatter mushrooms and garlic around and over chicken.

    • Drizzle olive oil over veggies.

  4. Make it creamy

    • In a bowl, mix cream and chicken broth.

    • Pour evenly over chicken and mushrooms.

  5. Bake

    • Cover loosely with foil.

  6. Add spinach & cheese

    • Remove foil.
