1½ lb (700 g) boneless, skinless chicken breast (or thighs)
2 cups mushrooms, sliced (button or cremini)
3 cups fresh spinach
3 cloves garlic, minced
1 tbsp olive oil
½ cup heavy cream (or half-and-half for lighter option)
¼ cup chicken broth
½ cup shredded mozzarella or grated Parmesan
1 tsp Italian seasoning
½ tsp paprika
Salt & black pepper, to taste

👩🍳 Instructions
Preheat oven
Heat oven to 375°F (190°C).
Lightly grease a baking dish.
Season the chicken
Pat chicken dry.
Season with salt, pepper, paprika, and Italian seasoning.
Place in baking dish.
Add vegetables
Scatter mushrooms and garlic around and over chicken.
Drizzle olive oil over veggies.
Make it creamy
In a bowl, mix cream and chicken broth.
Pour evenly over chicken and mushrooms.
Bake
Cover loosely with foil.
Bake for 25 minutes.
Add spinach & cheese
Remove foil.
Stir spinach into sauce (it will wilt quickly).
Sprinkle cheese over the top.
Finish baking
Return to oven uncovered.
Bake another 10 minutes until chicken is cooked through (165°F / 74°C) and cheese is bubbly.
Rest & serve
Let rest 5 minutes before serving.
