Chicken Zucchini Bake

Parmesan Baked Potatoes

🛒 Ingredients

  • 4–5 medium Yukon Gold or red potatoes

  • 3 tbsp olive oil or melted butter

  • ½ cup grated Parmesan cheese (freshly grated works best)

  • 1 tsp garlic powder

  • ½ tsp smoked paprika (optional)

  • ½ tsp dried Italian seasoning or thyme

  • ½–¾ tsp salt

  • ¼ tsp black pepper

  • Fresh parsley, chopped (for garnish)


👩‍🍳 Instructions


1️⃣ Prep the Potatoes

  1. Preheat oven to 400°F (200°C).

  2. Wash and dry potatoes.

  3. Cut into halves or thick wedges (keep pieces similar size).


2️⃣ Season

  1. In a large bowl, toss potatoes with olive oil or melted butter.

  2. Add garlic powder, paprika, Italian seasoning, salt, and pepper.

  3. Mix well to coat evenly.


3️⃣ Add Parmesan Crust

  1. Sprinkle half of the Parmesan onto a parchment-lined baking sheet.

  2. Arrange potatoes cut-side down over the cheese layer.

  3. Sprinkle remaining Parmesan over the tops of the potatoes.

This creates a crispy, golden cheese crust underneath.


4️⃣ Bake

  1. Bake for 35–45 minutes until potatoes are fork-tender and golden brown.

  2. For extra crispiness, broil 2–3 minutes at the end (watch carefully).


5️⃣ Serve

  1. Let cool 5 minutes before removing (this helps the cheese crust stick).

  2. Carefully lift with a spatula.

  3. Garnish with fresh parsley.

Serve with sour cream, garlic aioli, or ketchup.


💡 Tips for Extra Crispiness

  • Don’t overcrowd the pan — space allows browning.

  • Use freshly grated Parmesan for best melt and crust.

  • Flip halfway through if you prefer cheese on both sides.

  • Add a sprinkle of red pepper flakes for heat.


These potatoes turn out crispy, cheesy on the outside, fluffy inside, and absolutely addictive — perfect as a side dish or party snack.
