Chipotle Lime Steak Tacos

Ingredients:

2 lbs flank steak
2 tbsp olive oil
1 lime, juiced
3 garlic cloves, minced
2 tbsp chipotle in adobo, minced
1 tsp ground cumin
1 tsp smoked paprika
Salt and pepper to taste
8 small corn tortillas
Fresh cilantro, chopped
Red onion, thinly sliced
Avocado, sliced

Directions:

In a bowl, whisk together olive oil, lime juice, garlic, chipotle, cumin, paprika, salt, and pepper. Place the steak in a resealable bag and pour the marinade over it. Marinate in the refrigerator for at least 2 hours, preferably overnight.
Heat a grill or skillet to high heat. Remove the steak from the marinade and grill for about 5-6 minutes on each side for medium-rare, or until desired doneness.
Let the steak rest for 10 minutes, then slice against the grain.
Warm the tortillas on the grill or skillet. Serve the steak in tortillas, topped with cilantro, red onion, and avocado slices.
