Cilantro Chicken Bites with Kiwi Strawberry Salsa

Perfect for weeknight dinners, meal prep, or party appetizers!


🛒 Ingredients (Serves 4)

🍗 For the Chicken:

  • 1½ lbs boneless, skinless chicken breasts (cut into bite-size pieces)

  • 2 tbsp olive oil

  • Juice of 1 lime

  • 3 cloves garlic, minced

  • ½ tsp salt

  • ½ tsp black pepper

  • 1 tsp cumin

  • 1 tsp paprika

  • ½ tsp chili flakes (optional)

  • ¼ cup fresh cilantro, finely chopped

🥝🍓 For the Kiwi Strawberry Salsa:

  • 2 ripe kiwis, peeled & diced

  • 1 cup fresh strawberries, diced

  • 2 tbsp red onion, very finely chopped

  • 1–2 tbsp fresh cilantro, chopped

  • Juice of ½ lime

  • Pinch of salt

  • Optional: 1 small jalapeño, finely minced (for heat)


👩‍🍳 Instructions

1️⃣ Marinate the Chicken

In a bowl, mix:

  • Olive oil

  • Lime juice

  • Garlic

  • Salt, pepper

  • Cumin & paprika

  • Cilantro

Add chicken pieces and toss well.
Let marinate for at least 20 minutes (or up to 2 hours in the fridge for more flavor).


2️⃣ Make the Salsa

In a separate bowl, gently combine:

  • Kiwi

  • Strawberries

  • Red onion

  • Cilantro

  • Lime juice

  • Salt

Mix carefully so fruit stays chunky.
Refrigerate until ready to serve.


3️⃣ Cook the Chicken

Heat a large skillet over medium-high heat.

Add chicken in a single layer (don’t overcrowd).
Cook 3–4 minutes per side until:

  • Golden brown

  • Cooked through (internal temp 165°F / 75°C)

Remove from heat.


4️⃣ Assemble & Serve

Spoon fresh kiwi strawberry salsa over warm chicken bites.

  • Serve over rice or quinoa

  • Stuff into tacos

  • Add to salad bowls

  • Serve with tortilla chips as an appetizer


💡 Beginner Tips

  • Pat chicken dry before marinating for better browning
