Cinnamon Cream Cheese Frosting

Ingredients:

For the Bread:

  • 3 ripe bananas, mashed
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 1/4 cup canola or vegetable oil
  • 1 and 1/2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup sweetened shredded coconut
  • 1/2 cup pineapple, diced and patted dry
  • 1/2 cup chopped pecans

For the Frosting:

  • 4 ounces cream cheese, softened
  • 1/4 cup butter, softened
  • 1/2 cup powdered sugar
  • 1/2 teaspoon vanilla
  • 1/2 teaspoon cinnamon

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Coat a loaf pan with nonstick cooking spray.
  2. Prepare the Batter:
    • In a large bowl, mix together the mashed bananas, sugar, brown sugar, egg, and oil until well combined.
    • In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
    • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
    • Fold in the shredded coconut, diced pineapple, and chopped pecans.
  3. Bake:
    • Pour the batter into the prepared loaf pan.
    • Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
    • Allow the bread to cool in the pan for 10-15 minutes before transferring it to a wire rack to cool completely.
  4. Prepare the Frosting:
    • In a medium bowl, beat the softened cream cheese and butter together until smooth.
    • Add the powdered sugar, vanilla, and cinnamon, and continue to beat until well combined and fluffy.
  5. Frost the Bread:
    • Once the bread has completely cooled, spread the cinnamon cream cheese frosting evenly over the top.
    • Optionally, sprinkle additional chopped pecans over the frosting for extra crunch.
