Classic Cucumber Sandwich
Ingredients
8 slices whole wheat or white bread
1 large cucumber, thinly sliced
4 oz cream cheese, softened
1/4 cup Greek yogurt
1 tbsp fresh dill, finely chopped
1 tbsp fresh chives, finely chopped
1 tbsp fresh parsley, finely chopped
1 tsp lemon juice
Salt and black pepper, to taste
Directions
Prepare the herb spread: In a bowl, mix the softened cream cheese, Greek yogurt, dill, chives, parsley, lemon juice, salt, and black pepper until well combined and smooth.
Assemble the sandwiches: Spread a generous layer of the herb spread on one side of each bread slice. Arrange cucumber slices evenly over half of the bread slices. Top with the remaining bread slices, spread side down.
Serve: Cut the sandwiches in half or into quarters. Serve immediately or chill until ready to serve.
