They’re light, flavorful, and absolutely delicious!
🛒 Ingredients
For the Fish
- 6 thin white fish fillets (sole, flounder, tilapia, or cod)
- 1 tablespoon olive oil
- ½ teaspoon paprika
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
For the Filling
- 8 oz (225 g) lump crab meat, drained
- ½ cup finely grated Parmesan cheese
- ¼ cup finely diced red bell pepper
- 2 tablespoons finely chopped parsley
- 2 tablespoons finely chopped green onion
- 2 garlic cloves, minced
- 2 tablespoons mayonnaise
- 1 tablespoon fresh lemon juice
- ½ teaspoon Old Bay seasoning
- ¼ teaspoon black pepper
- ¼ teaspoon red pepper flakes, optional
For the Sauce
- 2 tablespoons butter, melted
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 garlic clove, minced
- ½ teaspoon Italian seasoning
👩🍳 Instructions
1. Prepare the Filling
In a bowl, gently combine the crab meat, Parmesan, red pepper, parsley, green onion, garlic, mayonnaise, lemon juice, Old Bay seasoning, and black pepper.
Don’t overmix—you want some pieces of crab to remain intact.
2. Prepare the Fish
Pat the fish fillets dry.
Season both sides lightly with paprika, garlic powder, salt, and black pepper.
3. Roll the Fish
Place about 2 tablespoons of crab filling near the wider end of each fillet.
Roll the fish tightly around the filling and place each roll seam-side down in a lightly greased baking dish.
4. Make the Lemon Butter Sauce
Whisk together melted butter, olive oil, lemon juice, garlic, and Italian seasoning.
Drizzle the mixture over the fish rolls.
5. Bake
Preheat oven to 375°F (190°C).
Bake uncovered for 20–25 minutes, depending on the thickness of the fish.
The fish should be opaque, flaky, and reach 145°F (63°C) internally.
For the beautiful golden edges shown in the photo, broil for 1–2 minutes at the end, watching carefully.
6. Garnish & Serve
Sprinkle with fresh parsley and a little paprika.
Serve with lemon wedges and spoon the buttery pan juices over each roll.

- If your fish is thick, gently pound it to an even thickness.

- For extra richness, add 2 tablespoons of softened cream cheese to the filling.
- You can substitute cooked chopped shrimp for some or all of the crab.
