Cranberry Nut Loaf
Ingredients
2 cups (250 g) all-purpose flour
1 tsp baking powder
½ tsp baking soda
½ tsp salt
½ cup (100 g) granulated sugar
¼ cup (50 g) brown sugar
2 large eggs
½ cup (120 ml) vegetable oil or melted butter
¾ cup (180 ml) plain yogurt or buttermilk
1 tsp vanilla extract
1 tsp orange zest (optional, but recommended)
1 cup dried cranberries
½ cup chopped walnuts or pecans (mixed into the batter)
Topping
½ cup chopped walnuts or pecans
1 tbsp brown sugar (optional)
Instructions
Preheat the oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan.
In a bowl, whisk together the flour, baking powder, baking soda, and salt.
In another bowl, whisk the eggs, sugars, oil, yogurt, vanilla, and orange zest until smooth.
Fold the dry ingredients into the wet ingredients until just combined.
Stir in the dried cranberries and chopped nuts.
Pour the batter into the prepared loaf pan.
Sprinkle the remaining chopped nuts (and brown sugar, if using) over the top.
Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
Let cool in the pan for 10–15 minutes before transferring to a wire rack.
Optional Orange Glaze

Mix:

½ cup powdered sugar
1–2 tbsp fresh orange juice

Drizzle over the cooled loaf if desired.
