Creamy Baked Rice Pudding
🌟 Ingredients
- ½ cup short-grain rice (or any white rice)
- 2 cups whole milk
- 1 cup heavy cream (for extra richness)
- ⅓–½ cup sugar (adjust to taste)
- 1 tsp vanilla extract
- ½ tsp cinnamon (optional)
- Pinch of salt
- 2 egg yolks (for creaminess)
- 2 tbsp butter
👩🍳 Instructions
1. Cook the Rice
- In a saucepan, combine rice, milk, and a pinch of salt.
- Cook over low-medium heat, stirring occasionally, until rice is soft and creamy (15–20 minutes).
2. Add Flavor
- Stir in sugar, butter, vanilla, and cinnamon.
- Let it cook for another 2–3 minutes.
3. Add Egg Yolks
- In a small bowl, whisk egg yolks.
- Slowly add a few spoonfuls of hot rice mixture (to temper), then mix back into the pot.
- Stir continuously for 2–3 minutes until thickened.
4. Bake
- Preheat oven to 180°C (350°F).
- Pour mixture into a greased baking dish or ramekins.
- Bake for 25–30 minutes until set.
5. Caramelize the Top (like in the picture 🔥)
- Sprinkle a thin layer of sugar on top.
- Broil for 2–3 minutes until golden and slightly crispy
(or use a kitchen torch for a crème brûlée-style crust).

- Add raisins or nuts if you like extra texture.
