Creamy Chicken & Carrot Spread

2 cups cooked chicken (shredded or chopped; rotisserie works well)
1 cup carrots, finely grated
4 oz (115 g) cream cheese, softened
ΒΌ cup mayonnaise (or Greek yogurt for lighter version)
1 tbsp Dijon mustard
1 tbsp lemon juice
1 small garlic clove, minced or grated
2 tbsp finely chopped fresh parsley (optional)
Β½ tsp salt (adjust to taste)
ΒΌ tsp black pepper
1β2 tbsp milk (if needed for smoother texture)

Step 1: Prepare the Carrots
Grate carrots finely using a box grater.
If very moist, gently pat dry with paper towel.
Step 2: Mix the Base
In a medium bowl, combine:
Softened cream cheese
Mayonnaise (or yogurt)
Dijon mustard
Lemon juice
Garlic
Salt and pepper
Mix until smooth and creamy.
Step 3: Add Chicken & Carrots
Stir in shredded chicken and grated carrots.
Add parsley if using.
Mix until evenly combined.
Step 4: Adjust Texture
For chunkier spread: leave as is.
For smoother spread: pulse in a food processor.
Add 1β2 tbsp milk if needed for extra creaminess.
