How to Make Creamy Chicken & Broccoli Noodles

1. Cook the noodles

Bring a large pot of salted water to a boil and cook the noodles according to the package directions until they’re just tender.

Before draining, save about ½ cup of the noodle cooking water. It can be surprisingly useful later if your sauce needs loosening.

Drain the noodles and set them aside.

2. Cook the chicken

Heat the oil or butter in a large skillet over medium-high heat.

Season the chicken with salt, black pepper, and paprika. Add it to the hot skillet and cook for about 5–7 minutes, turning occasionally, until golden on the outside and cooked through.

Transfer the chicken to a plate for a moment.

3. Add the broccoli

In the same skillet, add the chopped onion and cook for 2–3 minutes until softened.

5. Bring everything together

Return the cooked chicken to the skillet and add the drained noodles.

Toss everything together until the noodles are completely coated in that creamy sauce.

If the sauce seems too thick, add a splash of the reserved noodle water and stir again. Add a little at a time until you reach the consistency you like.

Taste and adjust the salt and pepper.

6. Serve

Turn off the heat and sprinkle with fresh parsley and a little extra Parmesan if you like.

Serve immediately while the noodles are warm, creamy, and wonderfully comforting.

A Few Tips From My Kitchen

Don’t overcook the noodles. They’ll continue soaking up some of the sauce once they’re added to the skillet, so slightly firm noodles work best.

Cut the chicken evenly. Bite-sized pieces cook quickly and make every forkful easier to enjoy.

Use freshly grated Parmesan if possible. It melts more smoothly and gives the sauce a richer flavor.

Don’t throw away all your noodle water. A little starchy cooking water can help turn a sauce that’s too thick into something silky and smooth.

Can I Use Different Noodles?

Absolutely. I’ve made versions of this recipe with regular egg noodles, spaghetti, fettuccine, and even short pasta when that’s what I had in the cupboard.
