Creamy Garlic Chicken & Broccoli

🧾 Ingredients (Serves 3–4)

🐔 Chicken

  • 500 g chicken breast or thighs (cut into bite-sized pieces)
  • 1 tbsp olive oil or butter
  • Salt & black pepper to taste
  • 1 tsp paprika (optional)

🥦 Vegetables

  • 2 cups broccoli florets
  • 2–3 tbsp water (for steaming broccoli in pan)

🧄 Creamy garlic sauce

  • 2 tbsp butter
  • 4 cloves garlic (minced)
  • 1 cup heavy cream
  • ½ cup chicken broth (or water + stock cube)
  • ¾ cup grated parmesan cheese
  • ½ tsp Italian seasoning (or dried oregano)
  • Salt & black pepper to taste
  • Optional: chili flakes for heat

🔪 Step-by-Step Instructions

1) Cook the chicken

  • Heat oil or butter in a large pan over medium-high heat.
  • Season chicken with salt, pepper, and paprika.
  • Cook until golden and fully cooked (6–8 minutes).
  • Remove and set aside.

2) Cook the broccoli

  • In the same pan, add broccoli and 2–3 tbsp water.
  • Cover and steam for 3–4 minutes until bright green and slightly tender.
  • Remove and set aside with chicken.

3) Make the creamy garlic sauce

  • Lower heat to medium.
  • Add butter and garlic; sauté for 30–60 seconds (don’t brown).
  • Pour in chicken broth and stir.
  • Add cream and bring to a gentle simmer.
  • Stir in parmesan and Italian seasoning.
  • Season with salt, pepper, and chili flakes if using.

4) Combine everything

  • Return chicken and broccoli to the pan.
  • Toss until fully coated in sauce.
  • Simmer for 2–3 minutes until thick and creamy.
