Creamy Garlic Chicken & Broccoli

🧾 Ingredients (Serves 3–4)
🐔 Chicken
- 500 g chicken breast or thighs (cut into bite-sized pieces)
- 1 tbsp olive oil or butter
- Salt & black pepper to taste
- 1 tsp paprika (optional)
🥦 Vegetables
- 2 cups broccoli florets
- 2–3 tbsp water (for steaming broccoli in pan)
🧄 Creamy garlic sauce
- 2 tbsp butter
- 4 cloves garlic (minced)
- 1 cup heavy cream
- ½ cup chicken broth (or water + stock cube)
- ¾ cup grated parmesan cheese
- ½ tsp Italian seasoning (or dried oregano)
- Salt & black pepper to taste
- Optional: chili flakes for heat
🔪 Step-by-Step Instructions
1) Cook the chicken
- Heat oil or butter in a large pan over medium-high heat.
- Season chicken with salt, pepper, and paprika.
- Cook until golden and fully cooked (6–8 minutes).
- Remove and set aside.
2) Cook the broccoli
- In the same pan, add broccoli and 2–3 tbsp water.
- Cover and steam for 3–4 minutes until bright green and slightly tender.
- Remove and set aside with chicken.
3) Make the creamy garlic sauce
- Lower heat to medium.
- Add butter and garlic; sauté for 30–60 seconds (don’t brown).
- Pour in chicken broth and stir.
- Add cream and bring to a gentle simmer.
- Stir in parmesan and Italian seasoning.
- Season with salt, pepper, and chili flakes if using.
4) Combine everything
- Return chicken and broccoli to the pan.
- Toss until fully coated in sauce.
- Simmer for 2–3 minutes until thick and creamy.
