Creamy Ham and Potato Salad
Ingredients
4 cups potatoes, diced and boiled
1 cup ham, diced
1/2 cup frozen peas, thawed
1/2 cup mayonnaise
1/4 cup sour cream
1 tablespoon Dijon mustard
2 tablespoons fresh chives, chopped
Salt and pepper, to taste
Directions
Prepare the Potatoes: Boil the diced potatoes in salted water until tender, about 10-12 minutes. Drain and let cool.
Combine Ingredients: In a large bowl, mix the cooled potatoes, diced ham, and thawed peas.
Make the Dressing: In a small bowl, whisk together the mayonnaise, sour cream, Dijon mustard, salt, and pepper.
Toss the Salad: Pour the dressing over the potato mixture and gently toss to coat. Garnish with chopped chives.
Chill and Serve: Refrigerate for at least 30 minutes before serving to let the flavors meld.
