Creamy Italian Sausage Pasta Soup
Ingredients:
1 lb Italian sausage (mild or spicy)
1 medium onion, diced
3 garlic cloves, minced
4 cups chicken broth
1 can (14.5 oz) diced tomatoes
1 cup heavy cream
2 cups short pasta (like ditalini or macaroni)
1 tsp Italian seasoning
½ tsp red pepper flakes (optional)
Salt & pepper to taste
½ cup grated Parmesan cheese
Fresh parsley, chopped (for garnish)

Step 1: Cook the Sausage
In a large pot, brown the Italian sausage over medium heat until fully cooked. Remove any excess grease.
Step 2: Sauté Veggies
Add the diced onion to the pot and cook until softened. Stir in garlic and cook for 1 minute until fragrant.
Step 3: Add Broth & Tomatoes
Pour in the chicken broth and diced tomatoes (with juice). Stir in Italian seasoning and red pepper flakes, if using. Bring to a gentle boil.
Step 4: Cook the Pasta
Add the pasta to the pot and cook until tender (about 8-10 minutes).
Step 5: Make it Creamy
Lower the heat and stir in the heavy cream and Parmesan cheese. Simmer for 2-3 minutes until the soup is rich and creamy. Season with salt and pepper to taste.
Step 6: Garnish & Serve
Ladle the soup into bowls and top with fresh parsley. Serve warm with crusty bread or a side salad.
