Crispy Zucchini Patties
Ingredients
- 3 medium zucchini, grated
- 1 teaspoon salt
- 2 large eggs
- ½ cup all-purpose flour
- ½ cup breadcrumbs
- ½ cup grated Parmesan cheese
- 2 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped
- 2 green onions, finely sliced
- ½ teaspoon black pepper
- ½ teaspoon dried oregano
- ¼ teaspoon paprika
- 2–3 tablespoons olive oil, for frying
Instructions
- Grate the zucchini: Grate the zucchini using the large holes of a box grater. Sprinkle with salt and let it sit for 10 minutes.
- Remove excess moisture: Place the zucchini in a clean kitchen towel or cheesecloth and squeeze firmly to remove as much liquid as possible. This step is important for crispy patties.
- Make the mixture: In a large bowl, combine the squeezed zucchini, eggs, flour, breadcrumbs, Parmesan, garlic, parsley, green onions, black pepper, oregano, and paprika. Mix until well combined.
- Shape the patties: Scoop about 2 tablespoons of the mixture and form into small, flat patties. If the mixture feels too wet, add another tablespoon or two of breadcrumbs.
- Heat the oil: Heat olive oil in a large skillet over medium heat.
- Cook: Place the patties in the hot skillet without overcrowding. Cook for about 3–4 minutes per side, or until golden brown and crispy.
- Drain: Transfer the cooked patties to a paper towel-lined plate to absorb excess oil.
- Serve: Serve warm with Greek yogurt, tzatziki, sour cream, or a squeeze of fresh lemon.
Optional Tzatziki Dip
- ½ cup Greek yogurt
- ½ small cucumber, grated and squeezed dry
- 1 tablespoon lemon juice
- 1 small garlic clove, minced
- 1 tablespoon fresh dill
- Salt and black pepper to taste
Mix all ingredients together and refrigerate until ready to serve.
