Crispy Zucchini Patties

Ingredients

  • 3 medium zucchini, grated
  • 1 teaspoon salt
  • 2 large eggs
  • ½ cup all-purpose flour
  • ½ cup breadcrumbs
  • ½ cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 2 green onions, finely sliced
  • ½ teaspoon black pepper
  • ½ teaspoon dried oregano
  • ¼ teaspoon paprika
  • 2–3 tablespoons olive oil, for frying

Instructions

  1. Grate the zucchini: Grate the zucchini using the large holes of a box grater. Sprinkle with salt and let it sit for 10 minutes.
  2. Remove excess moisture: Place the zucchini in a clean kitchen towel or cheesecloth and squeeze firmly to remove as much liquid as possible. This step is important for crispy patties.
  3. Make the mixture: In a large bowl, combine the squeezed zucchini, eggs, flour, breadcrumbs, Parmesan, garlic, parsley, green onions, black pepper, oregano, and paprika. Mix until well combined.
  4. Shape the patties: Scoop about 2 tablespoons of the mixture and form into small, flat patties. If the mixture feels too wet, add another tablespoon or two of breadcrumbs.
  5. Heat the oil: Heat olive oil in a large skillet over medium heat.
  6. Cook: Place the patties in the hot skillet without overcrowding. Cook for about 3–4 minutes per side, or until golden brown and crispy.
  7. Drain: Transfer the cooked patties to a paper towel-lined plate to absorb excess oil.
  8. Serve: Serve warm with Greek yogurt, tzatziki, sour cream, or a squeeze of fresh lemon.

Optional Tzatziki Dip

  • ½ cup Greek yogurt
  • ½ small cucumber, grated and squeezed dry
  • 1 tablespoon lemon juice
  • 1 small garlic clove, minced
  • 1 tablespoon fresh dill
  • Salt and black pepper to taste

Mix all ingredients together and refrigerate until ready to serve.
