Crustless Spinach Feta Bake
A light, savory Mediterranean-style bake packed with spinach, feta, herbs, and creamy eggs — perfect for breakfast, brunch, or a healthy dinner.
Ingredients
- 6 eggs
- 1 cup milk
- 1/2 cup plain yogurt or cream
- 1/3 cup olive oil
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp black pepper
Filling
- 4 cups fresh spinach, chopped
- 1 small onion, finely diced
- 2 garlic cloves, minced
- 1 cup feta cheese, crumbled
- 2 tbsp fresh dill or parsley, chopped
- 1 tbsp olive oil
Instructions
1. Prepare the filling
- Heat 1 tbsp olive oil in a skillet.
- Sauté onion for 3–4 minutes until soft.
- Add garlic and spinach.
- Cook until spinach wilts and excess moisture evaporates.
- Remove from heat and cool slightly.
2. Make the batter
In a large bowl whisk together:
- Eggs
- Milk
- Yogurt
- Olive oil
Add:
- Flour
- Baking powder
- Salt
- Black pepper
Mix until smooth.
3. Combine
- Fold spinach mixture into the batter.
- Stir in feta and fresh herbs.
4. Bake
- Grease an 8-inch baking dish or pie pan.
- Pour mixture into the dish.
- Bake at 350°F (175°C) for 35–40 minutes until golden and set in the center.
5. Serve
- Let cool for 10 minutes before slicing.
- Serve warm or room temperature.

Tips
- Squeeze excess water from spinach if using frozen spinach.
