Crustless Spinach Feta Bake

A light, savory Mediterranean-style bake packed with spinach, feta, herbs, and creamy eggs — perfect for breakfast, brunch, or a healthy dinner.

Ingredients

  • 6 eggs
  • 1 cup milk
  • 1/2 cup plain yogurt or cream
  • 1/3 cup olive oil
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Filling

  • 4 cups fresh spinach, chopped
  • 1 small onion, finely diced
  • 2 garlic cloves, minced
  • 1 cup feta cheese, crumbled
  • 2 tbsp fresh dill or parsley, chopped
  • 1 tbsp olive oil

Instructions

1. Prepare the filling

  1. Heat 1 tbsp olive oil in a skillet.
  2. Sauté onion for 3–4 minutes until soft.
  3. Add garlic and spinach.
  4. Cook until spinach wilts and excess moisture evaporates.
  5. Remove from heat and cool slightly.

2. Make the batter

In a large bowl whisk together:

  • Eggs
  • Milk
  • Yogurt
  • Olive oil

Add:

  • Flour
  • Baking powder
  • Salt
  • Black pepper

Mix until smooth.

3. Combine

  • Fold spinach mixture into the batter.
  • Stir in feta and fresh herbs.

4. Bake

  1. Grease an 8-inch baking dish or pie pan.
  2. Pour mixture into the dish.
  3. Bake at 350°F (175°C) for 35–40 minutes until golden and set in the center.

5. Serve

  • Let cool for 10 minutes before slicing.
  • Serve warm or room temperature.

Optional Additions

  • Sun-dried tomatoes
  • Mushrooms
  • Green onions
  • Mozzarella or parmesan
  • Red pepper flakes

Tips

  • Squeeze excess water from spinach if using frozen spinach.
  • Delicious with a Greek salad or yogurt sauce.
  • Keeps well in the fridge for up to 3 days.
