Ingredients:
2 medium cucumbers, finely diced
1 red bell pepper, finely diced
1-2 jalapeños (seeds removed for less heat, optional), finely chopped
1 small onion, finely chopped
2 cloves garlic, minced
2 tbsp honey
1 tbsp apple cider vinegar
1-2 tbsp red chili flakes (adjust for spice)

🧂 1/2 tsp salt

🌿 Fresh cilantro or parsley for garnish (optional)

Prepare the Vegetables:
In a medium bowl, combine the diced cucumbers, red bell pepper, jalapeños, onion, and garlic.
Make the Spicy Sauce:
In a small saucepan, whisk together honey, apple cider vinegar, Dijon mustard, red chili flakes, salt, and black pepper. Heat over medium heat, stirring constantly, until the sauce is well combined and slightly thickened (about 3-4 minutes).
Combine:
