Cucumber Tea Sandwiches
🧾 Ingredients
- 8–10 slices soft white bread (crusts removed)
- 1 large cucumber, thinly sliced
- 200 g (about ¾ cup) cream cheese, softened
- 2–3 tbsp mayonnaise (optional, for extra creaminess)
- 2 tbsp fresh dill or parsley, finely chopped
- 1 tsp lemon juice
- Salt & black pepper to taste
👩🍳 Instructions
1. Prepare the cucumber
- Slice cucumber very thin
- Pat dry with paper towel (important to avoid soggy sandwiches)
2. Make the spread
- In a bowl, mix cream cheese, mayonnaise, herbs, lemon juice, salt, and pepper until smooth
3. Assemble
- Spread a generous layer of the cream cheese mixture on one slice of bread
- Arrange cucumber slices evenly on top
- Cover with another slice of bread
4. Trim & cut
- Remove crusts (if not already done)
- Cut into small squares, rectangles, or triangles
5. Chill (optional but recommended)
- Refrigerate for 15–20 minutes to firm up before serving
💡 Tips
- Use fresh, soft bread for best texture
- Lightly butter the bread before adding filling to prevent sogginess
- Slice just before serving for neat edges

- Add thinly sliced radishes for extra crunch
- Use garlic herb cream cheese for more flavor
