Cucumber Tea Sandwiches

🧾 Ingredients

  • 8–10 slices soft white bread (crusts removed)
  • 1 large cucumber, thinly sliced
  • 200 g (about ¾ cup) cream cheese, softened
  • 2–3 tbsp mayonnaise (optional, for extra creaminess)
  • 2 tbsp fresh dill or parsley, finely chopped
  • 1 tsp lemon juice
  • Salt & black pepper to taste

👩‍🍳 Instructions

1. Prepare the cucumber

  • Slice cucumber very thin
  • Pat dry with paper towel (important to avoid soggy sandwiches)

2. Make the spread

  • In a bowl, mix cream cheese, mayonnaise, herbs, lemon juice, salt, and pepper until smooth

3. Assemble

  • Spread a generous layer of the cream cheese mixture on one slice of bread
  • Arrange cucumber slices evenly on top
  • Cover with another slice of bread

4. Trim & cut

  • Remove crusts (if not already done)
  • Cut into small squares, rectangles, or triangles

5. Chill (optional but recommended)

  • Refrigerate for 15–20 minutes to firm up before serving

💡 Tips

  • Use fresh, soft bread for best texture
  • Lightly butter the bread before adding filling to prevent sogginess
  • Slice just before serving for neat edges

🍽️ Variations

  • Add thinly sliced radishes for extra crunch
  • Use garlic herb cream cheese for more flavor
  • Add smoked salmon for a fancy twist
