Cucumber Tomato Onion Salad

A fresh, simple salad that’s perfect as a side dish for grilled meats, rice dishes, or a light lunch.

Ingredients (Serves 4)

  • 2 large cucumbers, sliced
  • 3 medium tomatoes, chopped
  • 1 medium red onion, thinly sliced
  • 2 tbsp extra-virgin olive oil
  • 1 tbsp lemon juice or red wine vinegar
  • 1 tsp dried oregano (optional)
  • ½ tsp salt (or to taste)
  • ¼ tsp black pepper
  • 2 tbsp fresh parsley or dill, chopped (optional)

Instructions

  1. Wash and prepare the vegetables.
  2. Slice the cucumbers, chop the tomatoes, and thinly slice the onion.
  3. Place all vegetables in a large salad bowl.
  4. In a small bowl, whisk together the olive oil, lemon juice (or vinegar), oregano, salt, and pepper.
  5. Pour the dressing over the vegetables.
  6. Toss gently until everything is evenly coated.
  7. Sprinkle with fresh parsley or dill if using.
  8. Let the salad sit for 10–15 minutes before serving for the best flavor.
