Cucumber Tomato Onion Salad
A fresh, simple salad that’s perfect as a side dish for grilled meats, rice dishes, or a light lunch.
Ingredients (Serves 4)
- 2 large cucumbers, sliced
- 3 medium tomatoes, chopped
- 1 medium red onion, thinly sliced
- 2 tbsp extra-virgin olive oil
- 1 tbsp lemon juice or red wine vinegar
- 1 tsp dried oregano (optional)
- ½ tsp salt (or to taste)
- ¼ tsp black pepper
- 2 tbsp fresh parsley or dill, chopped (optional)
Instructions
- Wash and prepare the vegetables.
- Slice the cucumbers, chop the tomatoes, and thinly slice the onion.
- Place all vegetables in a large salad bowl.
- In a small bowl, whisk together the olive oil, lemon juice (or vinegar), oregano, salt, and pepper.
- Pour the dressing over the vegetables.
- Toss gently until everything is evenly coated.
- Sprinkle with fresh parsley or dill if using.
- Let the salad sit for 10–15 minutes before serving for the best flavor.
