Date Almond Walnut Yogurt Loaf

This loaf is moist and tender from yogurt, naturally sweet from dates, and packed with almonds and walnuts. The recipe I found uses honey, melted butter, cinnamon, and vanilla.

Ingredients

  • 1 cup chopped dates
  • ½ cup chopped almonds
  • ½ cup chopped walnuts
  • 2 large eggs
  • ¾ cup plain yogurt
  • ⅓ cup honey or maple syrup
  • ⅓ cup melted butter or coconut oil
  • 1½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • Pinch of salt

Instructions

  1. Preheat the oven: Heat oven to 350°F (175°C). Grease and line a standard loaf pan with parchment paper.
  2. Prepare the dates and nuts: Chop the dates, almonds, and walnuts into small pieces. If your dates are very dry, soak them briefly in warm water, then drain well.
  3. Mix the wet ingredients: In a large bowl, whisk together eggs, yogurt, honey, melted butter, and vanilla until smooth.
  4. Add the dry ingredients: Add flour, baking powder, baking soda, cinnamon, and salt. Stir gently just until combined. Don’t overmix.
  5. Add dates and nuts: Fold in the chopped dates, almonds, and walnuts until evenly distributed throughout the batter.
  6. Fill the pan: Pour the batter into the prepared loaf pan and smooth the top. Sprinkle a few extra chopped walnuts or almonds over the top if desired.
  7. Bake: Bake for 45–55 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  8. Cool: Let the loaf cool in the pan for about 10–15 minutes, then transfer it to a wire rack and allow it to cool completely before slicing.

Tip: Toasting the almonds and walnuts before adding them gives the loaf an even richer, nuttier flavor.
