Date Almond Walnut Yogurt Loaf
This loaf is moist and tender from yogurt, naturally sweet from dates, and packed with almonds and walnuts. The recipe I found uses honey, melted butter, cinnamon, and vanilla.
Ingredients
- 1 cup chopped dates
- ½ cup chopped almonds
- ½ cup chopped walnuts
- 2 large eggs
- ¾ cup plain yogurt
- ⅓ cup honey or maple syrup
- ⅓ cup melted butter or coconut oil
- 1½ cups all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- Pinch of salt
Instructions
- Preheat the oven: Heat oven to 350°F (175°C). Grease and line a standard loaf pan with parchment paper.
- Prepare the dates and nuts: Chop the dates, almonds, and walnuts into small pieces. If your dates are very dry, soak them briefly in warm water, then drain well.
- Mix the wet ingredients: In a large bowl, whisk together eggs, yogurt, honey, melted butter, and vanilla until smooth.
- Add the dry ingredients: Add flour, baking powder, baking soda, cinnamon, and salt. Stir gently just until combined. Don’t overmix.
- Add dates and nuts: Fold in the chopped dates, almonds, and walnuts until evenly distributed throughout the batter.
- Fill the pan: Pour the batter into the prepared loaf pan and smooth the top. Sprinkle a few extra chopped walnuts or almonds over the top if desired.
- Bake: Bake for 45–55 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Cool: Let the loaf cool in the pan for about 10–15 minutes, then transfer it to a wire rack and allow it to cool completely before slicing.
