Delicious Protein Banana Bread

Ingredients:
2 large ripe bananas, mashed
2 large eggs
1/4 cup Greek yogurt (plain, low-fat or non-fat)
1/4 cup unsweetened almond milk (or any milk of choice)
1 cup almond flour (or oat flour for a slightly different texture)
1/2 cup vanilla protein powder (whey or plant-based)
1 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
Pinch of salt
Optional: 1-2 tbsp sugar-free sweetener (like erythritol or stevia), if you like it sweeter
Instructions:
Preheat the Oven: Preheat your oven to 350°F (175°C). Line a loaf pan with parchment paper or lightly spray with non-stick spray.
Mix Wet Ingredients: In a large bowl, mash the bananas until smooth. Add eggs, Greek yogurt, and almond milk, and whisk until well combined.
Combine Dry Ingredients: In another bowl, whisk together almond flour, protein powder, baking powder, baking soda, cinnamon, and salt.
Mix and Fold: Add the dry ingredients to the wet ingredients, and fold until just combined. Don’t over-mix to keep the bread moist.
Pour and Bake: Pour the batter into the prepared loaf pan. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
Cool and Serve: Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Slice and enjoy!
