Easy Cheesy Taco Casserole

🛒 Ingredients
Main
1 lb ground beef (or ground turkey)
1 small onion, diced
2 cloves garlic, minced
1 packet taco seasoning (or 2 tablespoons homemade)
½ cup water
1 can (10 oz) diced tomatoes with green chilies (like Rotel), drained slightly
1 can (15 oz) black beans, drained & rinsed
1 cup corn (fresh, frozen, or canned & drained)
8 small flour tortillas (or 6 medium), cut into halves
2 cups shredded Mexican blend cheese
½ cup sour cream
4 oz cream cheese, softened
Optional Toppings
Chopped cilantro
Diced tomatoes
Sliced jalapeños
Avocado or guacamole
Crushed tortilla chips
👩🍳 Instructions
1️⃣ Preheat
Preheat oven to 375°F (190°C).
Lightly grease a 9×13-inch baking dish.
2️⃣ Cook the Meat
In a large skillet over medium heat:
Cook ground beef and onion until browned.
Drain excess grease.
Add garlic and cook 30 seconds.
Stir in taco seasoning and water.
Simmer 2–3 minutes until slightly thickened.
3️⃣ Add Mix-Ins
Stir in:
Diced tomatoes
Black beans
Corn
Simmer 3–4 minutes, then remove from heat.
4️⃣ Make Creamy Layer
In a small bowl, mix:
Sour cream
Cream cheese
Blend until smooth.
5️⃣ Layer the Casserole
Layer in this order:
Spread a thin layer of meat mixture on bottom.
Add tortilla pieces (cover surface).
Spread half the creamy mixture.
Add half the meat mixture.
Sprinkle 1 cup cheese.
Repeat layers once more, finishing with remaining cheese on top.
6️⃣ Bake
Bake uncovered for 20–25 minutes, until bubbly and cheese is melted.
Let rest 5–10 minutes before slicing.
