🥒 Easy Zucchini Flatbread with Herbs

📝 Ingredients:

  • 2 medium zucchini (grated)
  • 1 teaspoon salt
  • 1 cup all-purpose flour (or whole wheat flour)
  • 2 tablespoons olive oil
  • 2 cloves garlic (minced)
  • 2 tablespoons fresh herbs (parsley, dill, or cilantro – finely chopped)
  • ½ teaspoon black pepper
  • ½ teaspoon chili flakes (optional)
  • ½ teaspoon baking powder (optional, for softer texture)

👩‍🍳 Instructions:

  1. Prep the zucchini
Grate the zucchini and sprinkle with salt. Let it sit for 10 minutes, then squeeze out as much water as possible using a clean cloth.
  2. Make the dough
In a bowl, combine squeezed zucchini, flour, garlic, herbs, olive oil, black pepper, and chili flakes. Mix until a soft dough forms.
(Add a little more flour if the dough feels sticky.)
  3. Shape the flatbreads
Divide into small portions and roll each into thin flatbreads using a rolling pin.
  4. Cook
Heat a pan over medium heat. Cook each flatbread for 2–3 minutes on each side until golden spots appear. Lightly brush with olive oil if desired.

🍽️ Serving Ideas:

  • Serve warm with yogurt dip, garlic sauce, or hummus
  • Pair with soup or salad for a light meal
  • Add cheese inside for a stuffed version

💡 Tips:

  • Squeezing out water from zucchini is key—otherwise dough gets soggy
  • You can add grated cheese (like mozzarella or feta) for extra flavor
  • Gluten-free flour also works with slight adjustments
