For the Casserole

  • 2 lbs (900 g) boneless, skinless chicken breasts, diced
  • 3 bell peppers (red, yellow, and green), sliced

  • 2 tbsp olive oil
  • 1 can (10 oz) diced tomatoes with green chilies, drained
  • 8 oz (225 g) cream cheese, softened
  • ½ cup sour cream
  • 1½ cups shredded Mexican cheese blend
  • ½ cup shredded cheddar cheese

Fajita Seasoning

  • 2 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp dried oregano
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp cayenne pepper (optional)

Optional Toppings

  • Fresh cilantro, chopped
  • Sliced avocado
  • Jalapeño slices
  • Diced tomatoes
  • Sour cream
  • Lime wedges

👩‍🍳 Instructions

  1. Preheat the oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. In a large bowl, combine the diced chicken with olive oil and all the fajita seasoning until evenly coated.
  3. Add the sliced bell peppers, onion, and drained diced tomatoes. Toss everything together.
  4. In a separate bowl, mix the cream cheese and sour cream until smooth.
  5. Fold the cream cheese mixture into the chicken and vegetables.
  6. Transfer the mixture to the prepared baking dish and spread evenly.
  7. Sprinkle the Mexican cheese blend and cheddar cheese over the top.
  8. Bake for 30–35 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the cheese is melted and bubbly.
  9. Broil for 2–3 minutes for a golden, lightly browned cheese topping.
