Feta and Cranberry Chickpea Salad with Lemon Vinaigrette 🥗

This chickpea salad is vibrant, nutritious, and full of Mediterranean flavors. Sweet dried cranberries, creamy feta, and protein-packed chickpeas are tossed in a bright lemon vinaigrette for a refreshing meal or side dish.


Ingredients 🛒

Salad

  • 1 can (400 g) chickpeas, drained and rinsed

  • ½ cup feta cheese, crumbled

  • ¼ cup dried cranberries

  • 1 small cucumber, diced

  • 1 small red bell pepper, diced

  • 2 tbsp red onion, finely chopped

  • 2 tbsp fresh parsley, chopped

Lemon Vinaigrette

  • 3 tbsp olive oil

  • 1 tbsp fresh lemon juice

  • 1 tsp honey or maple syrup

  • ½ tsp Dijon mustard (optional)

  • Salt and black pepper to taste

1. Prepare the Salad

  1. In a large bowl, combine chickpeas, cucumber, bell pepper, red onion, cranberries, and parsley.

  2. Add crumbled feta cheese.


2. Make the Lemon Vinaigrette

  1. In a small bowl, whisk together olive oil, lemon juice, honey, Dijon mustard, salt, and pepper until well combined.


3. Toss the Salad

  1. Pour the vinaigrette over the salad.

  2. Toss gently until all ingredients are evenly coated.


4. Serve

  • Serve chilled or at room temperature.

  • Great as a side dish, light lunch, or as a filling for wraps.


Tip: Add toasted nuts or seeds like almonds or pumpkin seeds for extra crunch.
