Salad
1 can (400 g) chickpeas, drained and rinsed
½ cup feta cheese, crumbled
¼ cup dried cranberries
1 small cucumber, diced
1 small red bell pepper, diced
2 tbsp red onion, finely chopped
2 tbsp fresh parsley, chopped
Lemon Vinaigrette
3 tbsp olive oil
1 tbsp fresh lemon juice
1 tsp honey or maple syrup
½ tsp Dijon mustard (optional)
Salt and black pepper to taste

1. Prepare the Salad
In a large bowl, combine chickpeas, cucumber, bell pepper, red onion, cranberries, and parsley.
Add crumbled feta cheese.
