1 ½ cups almond flour
2 tbsp coconut flour
1 tbsp baking powder

1 cup full-fat cottage cheese (smooth or blended)
2 large eggs
1 ½ cups shredded mozzarella cheese (low-moisture, part-skim)

🥣 Instructions:
1. Preheat Oven:
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat.
2. Prep Cottage Cheese:
If your cottage cheese is chunky, blend it in a food processor or blender until smooth (optional, but makes a smoother dough).
3. Melt the Cheese:
In a microwave-safe bowl, combine the shredded mozzarella and cottage cheese. Microwave in 30-second intervals, stirring in between, until melted and combined (about 1–2 minutes total).
💡 You can also melt it in a saucepan over low heat if you prefer.
4. Mix the Dough:
In a large mixing bowl, combine:
Almond flour
Coconut flour
Baking powder
Salt
Add the melted cheese mixture and the eggs to the dry ingredients. Mix well until a soft dough forms.

5. Shape the Bagels:
Divide the dough into 6 equal portions. Roll each into a log (about 6–7 inches long), then form into a circle and pinch the ends together to make a bagel shape.

Brush tops with a little beaten egg or water and sprinkle your favorite toppings.
