Ingredients
- 1 large cucumber, peeled and chopped
- 1 cup freshly squeezed lemon juice (about 4–6 lemons)
- 1/2 to 3/4 cup honey, sugar, or maple syrup (adjust to taste)
- 4 cups cold water
- 1 cup ice cubes
- 8–10 fresh mint leaves (optional)
- Lemon slices and cucumber rounds, for garnish
Instructions
- Blend the cucumber
- Add chopped cucumber and 1 cup water to a blender.
- Blend until smooth.
- Strain (optional)
- Pour through a fine mesh sieve for a smoother drink, pressing to extract all the juice.
- Mix the lemonade
- In a large pitcher, combine cucumber juice, lemon juice, sweetener, and remaining water.
- Stir well until sweetener dissolves.
- Chill
- Add ice and mint leaves if using.
- Refrigerate for at least 20 minutes for best flavor.
- Serve
- Pour into glasses and garnish with lemon slices and cucumber rounds.
