Broth:

  • 1 cup coconut milk
  • 1½ cups chicken broth (or water + stock cube)

  • ½ tsp cumin
  • ½ tsp coriander powder
  • Salt & black pepper to taste

Finish:

  • 1 tbsp lemon or lime juice

🔪 Step-by-Step Instructions

1) Sear the chicken

  • Heat oil in a deep pan or pot over medium heat.
  • Add chicken, season lightly with salt and pepper.
  • Cook until lightly golden (not fully cooked).
  • Remove and set aside.

2) Build the flavor base

  • In the same pot, sauté onion until soft.
  • Add garlic and ginger; cook until fragrant.

3) Add liquids & rice

  • Pour in coconut milk and chicken broth.
