  • 1 teaspoon lemon zest

  • 1 tablespoon chopped fresh parsley

  • 1 tablespoon fresh thyme or rosemary leaves

  • 2 tablespoons dried cranberries, optional

  • Freshly cracked black pepper, to taste

Instructions

Step 1: Prepare the Chicken

To get rid of extra moisture, pat the chicken dry using paper towels. When using thick chicken breasts, either gently pound them to a uniform thickness or slice them horizontally. This keeps the chicken juicy and helps it cook evenly.

Garlic powder, onion powder, paprika, dried thyme, salt, and black pepper should all be combined in a small bowl. Gently massage the seasoning mixture into the chicken’s two sides to ensure the spices stick.

While you prepare the additional ingredients, let the chicken rest at room temperature for approximately ten minutes. Don’t keep raw chicken out for too long.

Step 2: Sear Until Golden

Heat the olive oil in a large skillet over medium-high heat. When the oil is hot, arrange the chicken in a single layer, working in batches if necessary.

Cook for approximately 4–6 minutes per side, depending on thickness, until the chicken develops a beautiful golden-brown crust. The chicken does not need to be fully cooked at this stage because it will finish cooking in the sauce.

Add the butter during the final minute of searing and spoon the melted butter over the chicken for extra flavor. Transfer the chicken to a plate and set aside.

Step 3: Make the Honey-Cranberry Sauce

Reduce the heat to medium. Add the minced garlic to the same skillet and cook for about 30 seconds, stirring constantly until fragrant.

Pour in the chicken broth and balsamic vinegar, scraping the bottom of the skillet with a wooden spoon to release the flavorful browned bits.

Stir in the honey, Dijon mustard, cranberries, rosemary, thyme, and orange zest, if using. Bring the mixture to a gentle simmer and cook for 5–7 minutes.

As the cranberries soften, some will burst and release their juices, naturally thickening the sauce. Stir occasionally until it becomes glossy and slightly syrupy. Add the lemon juice to brighten the flavors.

Step 4: Finish Cooking the Chicken

Return the seared chicken to the skillet, nestling each piece into the cranberry sauce. Spoon the sauce over the chicken so every piece is coated.

Reduce the heat to medium-low, cover partially, and simmer for 8–12 minutes, or until the chicken is fully cooked. Cooking time will depend on the thickness of the pieces.

For food safety, the thickest part of the chicken should reach an internal temperature of 165°F (74°C). Transfer the chicken to a serving platter and stir the remaining tablespoon of butter into the sauce for a smooth, rich finish.

Pour the warm honey-cranberry sauce generously over the chicken, making sure plenty of cranberries are scattered around the platter.

Step 5: Prepare the Creamy Ricotta

In a small bowl, combine the ricotta cheese with one tablespoon of olive oil, lemon zest, and a pinch of freshly cracked black pepper.

Stir gently until the mixture becomes creamy and spreadable. Taste and add a little salt if needed.

For an extra-smooth texture, whisk the ricotta vigorously or briefly blend it in a food processor. This step is optional, but it creates a luxurious contrast to the sticky, glossy sauce.

Step 6: Assemble and Garnish

Arrange the chicken pieces on a large serving platter. Spoon any remaining cranberry glaze over the top, allowing it to collect around the chicken.

Add small dollops of creamy ricotta across the chicken and between the pieces. The cool, mild cheese balances the sweetness of the honey and the tartness of the cranberries.

Finish with fresh parsley, rosemary, and thyme. Sprinkle over a few dried cranberries if desired, and add a light drizzle of olive oil for a beautiful presentation.

Serve immediately while the chicken is warm and the ricotta is fresh and creamy.
