Greek Beef Gyro Wrap Bowl with Creamy Garlic Feta
A hearty Mediterranean bowl loaded with seasoned gyro-style beef, fluffy rice (or warm pita), crisp veggies, and a rich, tangy garlic feta sauce. Perfect for meal prep or a satisfying dinner.

🥩 Gyro-Style Beef
1 lb (450g) ground beef (85/15 for best flavor)
2 tbsp olive oil
3 cloves garlic, minced
1 tsp dried oregano
1 tsp dried thyme
1 tsp smoked paprika
½ tsp ground cumin
½ tsp ground coriander
¾ tsp salt
½ tsp black pepper
Juice of ½ lemon
🍚 Bowl Base
2 cups cooked jasmine or basmati rice (or quinoa)
1 cup cherry tomatoes, halved
1 cup cucumber, diced
¼ red onion, thinly sliced
½ cup kalamata olives, sliced
½ cup crumbled feta cheese
Fresh parsley or dill, chopped
🧄 Creamy Garlic Feta Sauce
¾ cup plain Greek yogurt
½ cup feta cheese
2 cloves garlic
1 tbsp olive oil
1–2 tbsp lemon juice
1–3 tbsp water (to thin)
Black pepper to taste
Blend until smooth and creamy. Adjust thickness as desired.

1️⃣ Prepare the Beef
Heat olive oil in a large skillet over medium heat.
Add garlic and cook for 30 seconds until fragrant.
Add ground beef and break apart with a spatula.
Stir in oregano, thyme, paprika, cumin, coriander, salt, and pepper.
Cook 6–8 minutes until browned and slightly crispy in spots.
Finish with fresh lemon juice. Remove from heat.
💡 For extra authentic texture, press cooked beef firmly into a loaf pan, chill 30 minutes, then slice and sear for crispy gyro-style edges.
2️⃣ Make the Sauce
Blend yogurt, feta, garlic, olive oil, lemon juice, and pepper until smooth.
Add water gradually until you reach a drizzle consistency.
Refrigerate until ready to serve.
3️⃣ Assemble the Bowl
Divide warm rice into bowls.
Top with seasoned beef.
Add tomatoes, cucumber, onion, olives, and feta.
Drizzle generously with creamy garlic feta sauce.
Garnish with fresh herbs and an extra squeeze of lemon.
