Greek Chicken Gyro Bowl with Honey Garlic Feta
🛒 Ingredients (4 servings)
🔹 Greek Chicken Marinade
1½ lbs boneless, skinless chicken thighs (or breasts)
3 tbsp olive oil
3 tbsp plain Greek yogurt
3 cloves garlic, minced
Juice of 1 lemon (about 2 tbsp)
1 tsp lemon zest
1½ tsp dried oregano
1 tsp paprika
½ tsp cumin
½ tsp salt
½ tsp black pepper
🔹 Honey Garlic Feta
6 oz feta cheese, crumbled or in a block
2 tbsp honey
1 clove garlic, finely grated
1 tbsp warm water (to thin, optional)
1 tsp olive oil
Pinch red pepper flakes (optional)
🔹 Bowl Base Options
Choose one or mix:
2 cups cooked jasmine or basmati rice
Quinoa
Cauliflower rice
Chopped romaine lettuce
🔹 Fresh Toppings
1 cup cherry tomatoes, halved
1 cup cucumber, diced
¼ red onion, thinly sliced
½ cup Kalamata olives
Fresh parsley or dill
Lemon wedges
🔹 Optional Tzatziki
1 cup Greek yogurt
½ cucumber, grated & squeezed dry
1 clove garlic, minced
1 tbsp lemon juice
1 tbsp olive oil
1 tbsp fresh dill
Salt to taste
👩🍳 Instructions
1️⃣ Marinate the Chicken
In a bowl, whisk olive oil, yogurt, garlic, lemon juice, zest, oregano, paprika, cumin, salt, and pepper.
Add chicken and coat well.
Cover and refrigerate at least 1 hour (best 4–8 hours).
2️⃣ Cook the Chicken
Grill method:
Preheat grill to medium-high.
Cook 5–7 minutes per side until internal temp reaches 165°F.
Stovetop method:
Heat skillet over medium-high with a drizzle of olive oil.
Cook 6–8 minutes per side.
Rest 5 minutes, then slice.
3️⃣ Make Honey Garlic Feta
In a small bowl, mix honey, garlic, olive oil, and red pepper flakes.
Drizzle over feta.
Add a splash of warm water if you want a more spoonable consistency.
4️⃣ Prepare Tzatziki (Optional)
Mix all ingredients until creamy. Chill until ready to serve.
5️⃣ Assemble the Bowl
Add rice (or base) to bowl.
Top with sliced chicken.
Add tomatoes, cucumber, red onion, olives.
Spoon tzatziki on one side.
Finish with honey garlic feta.
Garnish with fresh herbs and a squeeze of lemon.
