Greek Chicken Souvlaki Bowls with Spicy Garlic Sauce

Ingredients

For the Greek Chicken Souvlaki

  • 1½ lb (700 g) boneless skinless chicken breast or thighs, cut into bite-size pieces

  • 3 tbsp olive oil

  • 3 tbsp lemon juice

  • 3 garlic cloves, minced

  • 1 tsp dried oregano

  • 1 tsp paprika

  • ½ tsp cumin

  • ½ tsp black pepper

  • 1 tsp salt


For the Bowl Base

  • 2 cups cooked rice (white, brown, or jasmine)

  • 1 cup cherry tomatoes, halved

  • 1 cucumber, diced

  • ½ red onion, thinly sliced

  • 1 cup shredded lettuce

  • ½ cup crumbled feta cheese

  • ¼ cup chopped parsley


For the Spicy Garlic Sauce

  • ½ cup Greek yogurt

  • 2 tbsp mayonnaise

  • 2 garlic cloves, finely minced

  • 1 tbsp lemon juice

  • 1 tbsp olive oil

  • 1–2 tsp hot sauce or chili paste

  • ½ tsp paprika

  • Salt to taste


Instructions

1. Marinate the Chicken

  1. In a large bowl mix:

    • olive oil

    • lemon juice

    • garlic

    • oregano

    • paprika

    • cumin

    • salt and pepper

  2. Add the chicken pieces and toss well to coat.

  3. Cover and marinate 30 minutes to 2 hours in the refrigerator.


2. Cook the Chicken

Grill Method (Best Flavor)

  1. Thread chicken onto skewers.

  2. Grill over medium-high heat 10–12 minutes, turning occasionally until cooked through.

Skillet Method

  1. Heat 1 tbsp olive oil in a pan over medium-high heat.

  2. Cook chicken 6–8 minutes, stirring occasionally, until golden and fully cooked.


3. Make the Spicy Garlic Sauce

In a small bowl whisk together:

  • Greek yogurt

  • mayonnaise

  • minced garlic

  • lemon juice

  • olive oil

  • hot sauce

  • paprika

  • salt

Mix until smooth and creamy. Refrigerate until ready to serve.


4. Assemble the Bowls

Divide the rice among 4 bowls.

Top each bowl with:

  • grilled chicken souvlaki

  • tomatoes

  • cucumber

  • red onion

  • lettuce

  • feta cheese

  • parsley

Drizzle generously with spicy garlic sauce.


Optional Add-Ons

You can also add:

  • olives

  • roasted chickpeas

  • hummus

  • roasted potatoes

  • pita bread on the side
