Grilled Chicken Avocado Tomato Salad
Ingredients (Serves 4)
For the Chicken
- 2 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- ½ tsp dried oregano
- ½ tsp salt
- ¼ tsp black pepper
- Juice of ½ lemon
For the Salad
- 2 ripe avocados, diced
- 2 cups cherry tomatoes, halved
- 1 cucumber, sliced
- ¼ small red onion, thinly sliced
- 4 cups romaine lettuce or mixed greens
- 2 tbsp chopped fresh parsley or cilantro
Dressing
- 3 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp Dijon mustard
- 1 small garlic clove, minced
- Salt and black pepper to taste
Instructions
1. Marinate the Chicken
In a bowl, combine olive oil, garlic powder, paprika, oregano, salt, pepper, and lemon juice. Coat the chicken well and let it marinate for at least 15–20 minutes.
2. Grill the Chicken
Heat a grill pan or outdoor grill over medium-high heat. Grill chicken for about 5–6 minutes per side, or until fully cooked and the internal temperature reaches 165°F (74°C).
Remove from heat and let rest for 5 minutes, then slice.
3. Prepare the Salad
In a large bowl, combine:
- Lettuce
- Cherry tomatoes
- Cucumber
- Red onion
- Avocado
- Fresh parsley or cilantro
4. Make the Dressing
Whisk together olive oil, lemon juice, Dijon mustard, garlic, salt, and pepper until smooth.
5. Assemble
Top the salad with sliced grilled chicken. Drizzle dressing over the salad and toss gently before serving.
