Ingredients

Chicken

  • 2 chicken breasts (or thighs)
  • 1 tbsp olive oil
  • 2 garlic cloves, minced
  • 1 tsp paprika
  • 1 tsp cumin
  • ½ tsp black pepper
  • ½ tsp salt
  • 1 tbsp lemon juice

Quinoa

  • 1 cup quinoa
  • 2 cups water or chicken broth
  • Pinch of salt

Vegetables (Power Bowl Base)

  • 1 cup cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach or kale
  • 1 avocado, sliced
  • ½ cup corn (optional)
  • ¼ cup red onion, thinly sliced

Dressing (Lemon Garlic Yogurt Dressing)

  • ½ cup Greek yogurt
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 garlic clove, minced
  • Salt and pepper, to taste
  • 1 tsp honey (optional)

Optional Toppings

  • Feta cheese
  • Sesame seeds
  • Pumpkin seeds
  • Chili flakes
  • Hummus drizzle

Step-by-Step Instructions

1. Cook the Quinoa

  1. Rinse quinoa under cold water.
  2. Add quinoa + water (or broth) to a pot.
  3. Bring to a boil, then reduce heat.
  4. Cover and simmer for 12–15 minutes.
  5. Fluff with a fork and set aside.

2. Grill the Chicken

  1. Mix olive oil, garlic, spices, and lemon juice.
  2. Coat chicken and marinate for 15–30 minutes (optional but better flavor).
  3. Grill or pan-sear:
    • 5–7 minutes per side
  4. Rest for 5 minutes, then slice.

3. Prepare the Dressing

Whisk together:

  • Greek yogurt
  • olive oil
  • lemon juice
  • garlic
  • salt and pepper
  • honey (optional)

Adjust thickness with a splash of water if needed.


4. Assemble the Bowl

Layer in each bowl:

  1. Quinoa base
  2. Fresh vegetables
  3. Sliced grilled chicken
  4. Avocado

5. Add Dressing & Toppings

  • Drizzle dressing over the top
  • Add feta, seeds, or chili flakes
