- 1 packet of reduced-sodium taco seasoning
- 1 cup diced tomatoes, drained
- 1 cup canned black beans, rinsed and drained
- 1 cup reduced-fat shredded cheddar cheese
- 1/2 cup diced green onions
- 1/2 cup diced jalapenos (optional)
- 1/2 cup salsa
- 1/4 cup light sour cream
- 1/4 cup chopped fresh cilantro
- 1 bag of baked tortilla chips
Instructions:
- Preheat the oven to 350°F (175°C).
- In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
- Stir in the taco seasoning packet and cook according to the package instructions.
- Spread the baked tortilla chips evenly on a large baking sheet.
- Evenly distribute the cooked ground beef over the chips.
- Sprinkle the diced tomatoes and black beans over the beef.
- Sprinkle the shredded cheddar cheese over the top.
- Place the baking sheet in the oven and bake for about 10-15 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and sprinkle the diced green onions and jalapenos (if using) over the top.
- Drizzle the salsa and light sour cream over the nachos.
- Garnish with chopped fresh cilantro.
- Serve immediately and enjoy!
