High-Protein Mediterranean Beef Bites with Creamy Pepper Sauce

Ingredients
For the Mediterranean Beef Bites
700 g (1.5 lb) lean beef sirloin or tenderloin, cut into bite-sized cubes
1 tbsp extra virgin olive oil
1 tsp smoked paprika
1 tsp dried oregano
1 tsp ground cumin
½ tsp ground coriander
½ tsp chili flakes (optional)
3 cloves garlic, minced
1 tbsp lemon juice
Salt and black pepper to taste
2 tbsp chopped fresh parsley (for garnish)
For the High-Protein Roasted Red Pepper Yogurt Sauce
1 cup plain Greek yogurt (0% or 2%)
½ cup roasted red peppers (jarred or homemade)
1 tbsp tahini
1 tbsp lemon juice
1 clove garlic
½ tsp smoked paprika
Salt to taste
For the Mediterranean Mashed Potatoes
800 g (about 4 medium) potatoes, peeled and cubed
2 tbsp extra virgin olive oil
¼ cup Greek yogurt (adds protein and creaminess)
2 cloves garlic, minced
Salt and black pepper to taste
2 tbsp chopped fresh parsley
Low-Carb Option: Substitute potatoes with mashed cauliflower.
Instructions
Prepare the Mashed Potatoes
Boil the cubed potatoes in salted water for 12–15 minutes until fork-tender.
Drain and mash with olive oil, Greek yogurt, garlic, salt, and pepper until smooth.
Stir in chopped parsley and keep warm.
Make the Roasted Red Pepper Yogurt Sauce
In a blender or food processor, combine Greek yogurt, roasted red peppers, tahini, lemon juice, garlic, smoked paprika, and salt.
Blend until smooth and creamy. Adjust seasoning to taste.
Refrigerate until ready to use.
Cook the Mediterranean Beef Bites
Pat the beef cubes dry and season with paprika, oregano, cumin, coriander, chili flakes, salt, and pepper.
Heat olive oil in a large skillet over medium-high heat.
Sear the beef for 3–4 minutes, turning to brown all sides.
Add minced garlic and cook for another minute.
Remove from heat and finish with a squeeze of lemon juice.
Garnish with fresh parsley.
Assemble the Meal Prep
Divide the mashed potatoes evenly among four airtight glass containers.
Add the seared beef bites alongside the potatoes.
Drizzle generously with the roasted red pepper yogurt sauce.
Sprinkle with additional parsley and a pinch of paprika for presentation.
