Step-by-Step Instructions

Step 1: Preheat Oven

Preheat oven to:

  • 350°F (175°C)

Grease or line your cake pan with parchment paper.

Step 2: Mix Dry Ingredients

In a large bowl combine:

  • Oat flour
  • Protein powder
  • Baking powder
  • Baking soda
  • Salt

Whisk well to remove lumps.

Step 3: Mix Wet Ingredients

In another bowl whisk:

  • Eggs
  • Greek yogurt
  • Honey
  • Milk
  • Vanilla

Mix until smooth and creamy.

Step 4: Combine Batter

Slowly fold wet ingredients into dry ingredients.

Do not overmix.

The batter should be thick but scoopable.

If too thick:

  • Add 1–2 tablespoons milk

Step 5: Add Berries

Gently fold in the berries.

Tip:

If using frozen berries:

  • Do not thaw first
  • Toss lightly in oat flour to reduce sinking

Step 6: Bake

Pour batter into prepared pan.

Bake:

  • 30–40 minutes

Cake is done when:

  • Top is golden
  • Toothpick comes out mostly clean

Cooling

Let cool:

  • 10 minutes in pan
  • Then transfer to wire rack

Cooling helps the protein structure set properly.

Optional Protein Frosting

Ingredients

  • ½ cup Greek yogurt
  • 1 scoop vanilla protein powder
  • 1 teaspoon honey

Mix until smooth.

Spread over cooled cake.

Top with extra berries.
